Bissap: A recipe for liquid sunshine

In celebration of summer, today we’re sharing the Koné family recipe for Bissap, a traditional West African beverage made from hibiscus flowers.

BISSAP RECIPE

Ingredients:

Water (6 quarts total; First boil = 4 quarts; Second boil = 2 quarts)
Organic Hibiscus Flowers (2 cups)
Mint (2-3 sprigs)
Vanilla (2 tsp)
Sugar (2 cups)

Add 4 quarts water, petals, and mint into a large pot and bring to a boil. Once boiling, turn heat to med-low or so your petals are at a steady simmer and set timer for 25 minutes. Strain tea into separate container and return petals to pot along with 2 more quarts water. Bring to boil, then simmer for 15 min.

While waiting for your second boil, add 2 tsp vanilla and 2 cups sugar into the first batch of Bissap. (Sugar amount can be increased / decreased depending on how sweet you'd like it to be.)

Once your 15 min boil is up, strain the second batch into the first batch's container. Mix and chill before serving.
