West African peanutpaste soup

PBsoup.jpg

This week we thought we’d share our recipe for West African Peanutpaste Soup since we could not do it in person like we did in 2019. We originally shared this recipe at our 2019 fundraiser for the Saint Genevieve Welcome Center, one of our partners in Côte d’Ivoire (CI). We will be spending a day with Ste. Genevieve this December during our 2021-2022 tour to CI. You can download the recipe here. It is a traditional soup, often with chicken, that uses peanut butter as a thickening agent and then served over rice.
